The ripe plums are first pressed and then transferred to stainless steel vats for fermentation. During this process, the plum seeds are left untouched to create the best conditions for a product that fundamentally influences the full aroma content of the distillate.
The ageing process takes place over four months in stainless steel tanks, which preserves the fragrance of the aromas.
