A classic among grappas made from a single grape variety. The alcoholic fermentation of the Cabernet pomace takes place in the must, i.e. at the winery. This guarantees a raw material that is particularly rich in the best aromatic elements. The fresh marc comes from selected suppliers and is stored in silos for a few months immediately after the first racking. The direct introduction of steam at low temperature (slightly more than 100°) at the base of the discontinuous distillation unit with eight copper boilers allows the extraction of the best volatile components from the pomace. Aging in stainless steel tanks for at least one year gives this grappa a better balance compared to freshly distilled grappa.Tasting notes:Colour: crystal clear. Nose: Sincere, fragrant.
